Nothing breaks in a new Mac better than a shiny copy of Vista Ultimate and Parallels. :)
I kid (but Vista does run like a champ on this hardware).
Other nice to have programs in addition to Keynote is the companion pages program as well. It runs rather nicely on the Intel hardware and lets you make some nice documents simply.
Omnigraffle Pro is a great program for knocking out the occasional wireframe and diagram if you don't need the full power, flexibility and complexity of Illustrator or InDesign (But if you're into any type of advanced print production or document creation I think In Design is a great tool.

I would put in a vote for:
- Transmit as an FTP client
- VooDoo Pad for desktop wiki to capture your notes
- Keynote for presentations (like PowerPoint, but with out the swearing)
- MailTags which not only tags your mail but provides project and
hooks for to do and calendar in Apple Mail
- Firefox browser (Safari is good, but heavy Ajax sites are not Safari friendly)
- Camino browser (another Mozilla variant)
- QuickSilver (another vote as it is worth it)
- iGTD (if you a fan of Getting Things Done (tm)
- Skitch (when it becomes an open Beta)
