Start with John Dewey's seminal essay "Having an Experience."  In it,  
he defines an experience as having a structured beginning, middle,  
and end that could contain a number of interactions and emotions  
around an ordered whole.

Jodi Forlizzi has done some work in this area, coming up with models  
for experiences and how they relate to interaction design:
