That may work, but which option should be replaced?

Why not use a container with a list of empty spaces (maybe with stripes, so
that users can count easily the total number of options... or a numbered
empty list)?

It can be filled just clicking at the option. But it won't accept more
options (than the predetermined max) once filled. At the right (...or left)
of each item there's an 'x' or '<' or 'trash can' to delete the item and
have one empty space.
