Dan,
I'm going to read between the lines here and assume that you were
interviewing for a developer/programmer position. In my experience
programmers generally don't make the best interaction architects (though
you will get lucky and find a few). Also, if I wanted an interface
designer, I would post the job as such, not for a programmer.
Perhaps you were just responding to the wrong job postings?

P.S. The proof is in the pudding: if you go to work, put in the UI
effort and produce good output ... you will make a splash. Trust me.
