Dan,
Just a couple....
Designing Visual Interfaces (Mullet/Sano)
The elements of User Experience (Garrett)
I believe these are helpful and insightful to 'our discipline'.
There are plenty of books with the word 'usability' in the title, but I
guess that would be politically incorrect :)

Not to mention books! Where are the interaction design books? Part of
getting our discipline out there is educating new practitioners and
non-designers about what we do and how to do it. I count a handful of
books in specifically our discipline:
- About Face
- Inmates
- Designing from Both Sides of the Screen
- The Art of Interaction Design
- Interaction Design
- Design for New Media: Interaction Design for Multimedia and the Web
- Interaction Design for Complex Problem Solving
To my knowledge, only About Face and Inmates have any mind share and
are widely read. Any I'm missing?
